Baked sweet potato fries

Sweet potatoes are a rich source of lycopene and beta-carotene, and are also excellent as fries. When baked, they’ll have less calories, but will be as tasty as traditional French fries. They can be classically seasoned with salt, or they can be sweet: with cinnamon or cardamom. You should really try them out, they’re incredibly easy to prepare!

Ingredients:

  • 2 big sweet potatoes
  • 2-3 tablespoons of canola or olive oil
  • salt and pepper
  • herbs: dried sweet pepper or thyme and rosemary

Tomato sauce:

  • 200g of reduced-fat feta cheese
  • 5 tablespoons of 1.5% fat yoghurt
  • 2 tomatoes
  • 2 garlic cloves
  • salt and pepper

Preparation:

Rinse the sweet potatoes thoroughly and peel them, then cut them into evenly thick sticks. Mix the olive or canola oil with salt and spices. Throw the sliced sweet potatoes into the bowl and mix them well with the oil, so that the vegetables are evenly covered with spices – your child will surely be able to help you with this .

Pour the contents of the bowl on a tray covered with baking paper, spread them out evenly and bake in the oven at 220 degrees Celsius (428 degrees Fahrenheit) with the convection setting for 20 to 25 minutes.

From time to time, check the oven to see if they don’t bake too hard! It’s worth to prepare a simple tomato sauce for the fries. Blend the feta cheese with a bit of yoghurt and add the peeled and diced tomatoes. Season it with salt and pepper.
